Healthy Sweet Potato Muffins with Caramelized Walnuts

I made these sweet potato muffins recently and was actually really surprised by its softness and moist texture that I decided I really have to post this recipe here on the blog for you! The caramelized walnuts are optional, but in case you have a sweet tooth, I posted the recipe for you down here too. Just in case 🙂

Over the past years, I really started to love sweet potatoes. You can make so many different dishes, soups, stews and even desserts with them. I love its natural sweetness, color, and texture. I really have to list you a few nutritional facts of this great vegetable:

  • it is high in fiber
  • low in calories (86 calories per 100 g)
  • almost zero fat
  • also really low in carbs (only 20 g per 100 g)
  • it also contains vitamins like vitamin C and B6
  • also potassium and small amounts of magnesium, iron, calcium and vitamin E

Also, as I am a really big fan of walnuts there are a few fantastic facts for the health benefits that walnuts provide for your body that I need to list:

  • walnuts contain antioxidants that are capable of preventing certain compounds from damaging nutrients that your body needs for energy
  • walnuts have the capability of improving your mood, because they provide an excellent source of omega-3 fatty acids
  • they are anti-inflammatory too
  • and also contain a certain number of specific vitamins and minerals that benefit  your body, including vitamin E, vitamin C, vitamin A, and vitamin B

The recipe is really easy, you can either use a blender or food processor to puree the raw sweet potato or grate them per hand – whatever you like best. The muffins are also healthy and vegan! They taste so amazing especially with the wintery spices I used like cinnamon, aniseed, and cloves. The perfect fall dessert for the whole family or just yourself!

Sweet Potato Muffins with caramelized walnuts

Prep Time 25 mins
Cook Time 30 mins
Course dessert, muffins
Servings 10 servings


For the muffins

  • 200 g sweet potato or take just one regular sized sweet potato
  • 1 hand full dates pitted
  • 1 dash lemon juice
  • 100 ml water
  • 3 tbsp vegetable oil
  • 4 tbsp maple syrup
  • 150 g wheat flour wholegrain
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp aniseed ground
  • 1/2 tsp cloves ground
  • 2 tsp cinnamon ground

For the caramelized walnuts

  • 100 g raw cane sugar
  • 100 g walnuts halves


For the muffins

  • Start by peeling and cutting the sweet potato into pieces
  • Put the sweet potato in a blender/food processor together with dates, lemon juice, water, oil and maple syrup. Blend everything together until smooth
  • Stir together flour, baking powder, baking soda and all of the spices together in a bowl
  • Add the creamy sweet potato mixture to the flour mix and stir very well
  • Fill the dough into a muffin baking pan or cups and bake your muffins for 15 min at 180 °C in a preheated oven

For the caramelized walnuts

  • Put the sugar into a pan, turn up the heat
  • Let the sugar melt and then bring it to a boil (don't forget to stir)
  • Let it boil for a few seconds, turn off the heat and then put the walnut halves into the sugar
  • Mix both ingredients very well
  •  Pour the mixture onto a tray with extra greased baking paper and spread it on this tray
  • Let the nuts cool and then chop them into little pieces


The greased baking paper is an important step because once the walnuts are cold they stick on the paper and are super hard to peel off.
