It’s September 1st and finally and officially autumn (well at least for me)! And that means pumpkin, pumpkin and even more pumpkin!
Do you get me? Are you too in love with the fall? I don’t know why, but there is something that I enjoy so much about this season. Maybe because of the variety of spices we can use for cooking and baking? But what I love most is watching the leaves turn into these beautiful colors, the sunny autumn days and the foggy and cold nights where I can cozy up with a cup of tea and my favorite blanked…
Enough now, I am drifting away, let’s get back to why you came to this post in the first place: PUMPKIN!
I really can’t get enough of this delicious vegetable, because you can make so many awesome meals from it, like soup, oven-baked pumpkin, lasagne, so many delicious desserts, and even coffee.

This time I made a creamy, spicy and also vegan pumpkin soup with coconut milk which makes it even more creamy. And don’t forget to mention that this soup is also healthy and warms up your body from the inside. Which you totally need during this cold season.

Creamy and Spicy Pumpkin Soup
Ingredients
- 800 g a pumpkin of any kind I used an Hokkaido pumpkin
- 1 onion medium size
- 3 potatoes medium size
- 400 ml canned coconut milk
- 500 ml water
- 3 tsp curry powder
- 1 tsp garam masala optional
- 5 tbsp oilve oil
- salt and pepper
Instructions
- Peel the pumpkin and the potatoes (if you use the Hokkaido pumpkin you don't have to peel it)
- Cut the pumpkin, potatoes and the onion into chunks
- Take a pot and sauté the onion in olive oil
- Put the coconut milk to the onions and stir well
- Season it with salt pepper, curry and garam masala
- Add the potatoes and pumpkin to the pot
- Now pour the water into the pot and cook everything until all ingredients are well done
- Take a hand blender and purée your soup well
- At last add some pumpkin seeds or pumpkin-seed oil
