This healthy and vegan granola is filled with all the energy-giving and wholesome ingredients that you need for a good start in the day. I love easy breakfast recipes like this one when you don’t need to spend much time on a healthy meal in the morning.
Crunchy and Easy
With this pecan cherry granola recipe, there is not much effort needed to make. You just need to simply mix all of the ingredients together and roast them in the oven to add this crunchy texture and let the flavors pop out even more.
Vegan and Oil-free
This vegan recipe is healthy too because I did not use any oil. There is simply no extra fat needed as ingredients like nuts and flaxseeds provide enough natural fats for your body. However, I did need to add maple syrup to provide some sweetness as the only sweet ingredient for this granola
Sour Cherry and Nuts
This granola includes sour cherries if you don’t like them simply replace them with cranberries or some extra raisins. You can actually add other dried fruits as well but I think that the cherries add this sour taste which is a good contrast to the other ingredients. You’ll find pecans in this granola as well, but feel free to replace them too. You can use walnuts instead they are a great substitute!

This healthy and vegan granola is a great way to nurture your body early in the day. You can enjoy it by simply pouring plant milk into it. Use any type of plant milk you like, I think soy or oat milk works best (or even almond milk goes great with this granola!). You can also enjoy it with a plant yogurt like soy yogurt. Or enjoy it with fresh fruits as a snack, I know I love to do that.

Pecan Cherry Granola
- 150 g rolled oats
- 80 g raisins
- 50 g sour cherry dried
- 50 g quinoa or millet pops
- 4 tbsp flaxseeds whole or crushed
- 50 g pecan halves
- 2 tsp cinnamon ground
- 120 g maple syrup or agave syrup
- Chop the pecans into smaller pieces
- Put all the ingredients except the maple syrup in a bowl and mix them very well together
- Pour the maple syrup into the mix and stir very well
- Spread the mix on a baking tray with baking paper and bake your granola in a preheated oven for 10 min at 200 °C
- Don't forget to stir once or twice so it won't burn
