“What am I going to make for lunch or dinner today? I don’t feel like cooking and don’t really have time.” Who doesn’t know this everyday struggle? I know it too well so I am a huge fan of simple, easy meals that are quick to make and healthy at the same time. Just like this tasty lentil salad.
It is the perfect solution if you are looking for an easy and simple meal for dinner, lunch or even a snack to eat throughout the day.

You only need a few ingredients and 15 minutes of your time to make this delicious salad. The measurements are only rough so if you like you can always add some more or less of any ingredient like gherkins or lentils for example. This recipe is also great if you want to meal-prep for work, school or uni. Just put it in a bowl and store it in the fridge so it is still nice and fresh in a few days.
What I also really like about this salad is that it is so easy to make, nutritious and super filling at the same time. If you like you can eat some fresh bread or any other pastry with it. So yummy!
I honestly could eat it everyday – you have to try it out too!

Lentil Salad
Ingredients
- 500 g cooked lentils
- 4-6 gherkins
- 1 apple
- 50 ml water
- 4 tbsp mustard
- salt, pepper, lemon juice
Instructions
- Chop the apple and gherkins in small pieces and put them in a bowl together with the lentils.
- Add the mustard, some salt, pepper, a splash of lemon juice and mix everything well.
- Let everything sit for some time so the lentils can soak up all the condiments.
