A really great snack – vegan lentil bites with yogurt herb dip

I am a huge fan of snacks. As I am a person who gets hungry almost all the time, I really enjoy a healthy snack in between meal times. It is really more satisfying to snack something healthy that fills up your tummy with nutrients and fibers rather than stuffing some bread or crackers which make you feel unsatisfied. I really try to eat healthy snacks as much as I can but let’s be honest, sometimes we don’t have much time to prepare a wholesome snack. With these vegan lentil bites, you can make a difference though. You can prepare them on the weekends and store them in the fridge for up to 5 days. Also, feel free to make more lentil bites and freeze them up. You can either take them out of the freezer and defrost them overnight or put them in the microwave for a minute. That way you can have a quick and nutritious snack all the time.

Light and tasty lentil bites

The recipe for these vegan lentil bites is really easy to make. You start by cooking the lentils, they should be overcooked so they are mushy when you add lemon juice and couscous. You should add the couscous when the lentils are still hot, so the liquid will be much quicker absorbed. Before you add the chopped leek, it is recommended to sauté it previously which is better for the flavor of the lentil bites. When I like to cook oil-free and need to roast or sauté something I always use water instead of oil. You should give it a try, it works really great. After you added the condiments and parsley to the lentils you just need to form little balls with your hands, place them on a baking tray with baking paper and bake those bites in the oven. For the size of the balls, I use one tablespoon of the batter, wet my hands and then form small balls.

The yogurt herb dip

This vegan yogurt herb dip is really refreshing and a perfect dip to have for the lentil bites. With lots of lemon juice, fresh parsley and chives the soy yogurt turns into a tasty and healthy dip. I do not recommend to freeze the dip, as the texture might be too watery after you defrost it. You also don’t have to make the dip if you’re not a yogurt fan. The bites taste really great with ketchup too!

These vegan lentil bites are a really healthy and protein-packed treat and oil-free too. Lentils as the main ingredient of this recipe provide valuable minerals such as zinc, potassium, magnesium and iron. This snack contains lots of vitamin B and fiber as well.

Lentil Bites with yogurt herb dip

Ingredients
  

For the lentil bites

  • 200 g lentils yellow or red
  • 500 ml water
  • 100 g couscous
  • 100 g leek
  • 50 ml olive oil
  • 100 ml lemon juice
  • 1 tsp cumin ground
  • 1 tsp turmeric ground
  • 2 tbsp parsley, chopped fresh, dried or frozen
  • salt season to taste

For the yogurt herb dip

  • 250 g soy yogurt
  • 3 tbsp lemon juice
  • 2 tbsp chive, chopped fresh, dried or frozen
  • 3 tbsp parsley, chopped fresh, dried or frozen
  • salt season to taste

Instructions
 

For the lentil bites

  • First of all you need to rinse the lentils (put them in a sieve and rinse them with water)
  • Put lentils and water in a pot and bring it to a boil. When the lentils are boiling turn down the heat and let it gently cook until almost all of the liquid is absorbed
  • When the water is almost absorbed, turn off the heat and add lemon juice and couscous while the lentils are still hot. Stir very good. Put a lid on the pot and let it rest for about 10 minutes
  • In the meantime, chop the leek and sauté it in a frying pan with olive oil
  • Now add leek, cumin, turmeric, parsley and salt to your lentil-couscous mix and stir very well until all ingredients are well combined
  • Let the batter for the lentil bites cool a little bit until you form balls
  • For the lentil bites: form little balls with your hands by wetting your hands first, then taking one tablespoon of the batter and gently forming small balls in your palms
  • Place the balls on a baking tray with baking paper and bake your lentil bites in a preheated oven at 180 °C for 15 minutes

For the yogurt herb dip

  • Simply mix together all of the ingredients with an egg beater

Notes

When forming the lentil bites make sure you do not press the balls too firm in your palms as the balls will be easily destroyed.
If your batter is not firm enough you can still add a little more couscous and wait for a while until the liquid is soaked up. You can also add some flour instead of couscous, but make sure to start with a small amount so your dough won’t get too dry.
